FINISH VINTAGE SPANISH
OLOROSO SHERRY CASK

At HYDE we use TWO different casks to age our Sherry finished whiskey.

STAGE 1
BOURBON CASK: A 200 litre American White Oak Bourbon barrel.  This American barrel was originally used just once to mature bourbon whiskey. It imparts flavours such as Vanilla, honey, fudge and caramel sweetness to the whiskey.

STAGE 2
SHERRY CASK: A 250 litre toasted Spanish Oloroso Sherry cask sourced in the Andalucía region of Spain. These ‘hogsheads’ are first fill sherry casks which originally contained sweet Oloroso Sherry for at least 2 to 4 years.

At HYDE we use TWO different casks to age our Rum finished whiskey.

STAGE 1
BOURBON CASK: A 200 litre American White Oak Bourbon barrel.  This American barrel was originally used just once to mature bourbon whiskey. It imparts flavours such as Vanilla, honey, fudge and caramel sweetness to the whiskey.

STAGE 2
RUM CASK: For an additional 9 months we transfer HYDE into charred Dark Caribbean Rum casks, made from American white oak. A 200 litre flame charred Rum cask sourced in the Caribbean. These casks originally contained dark Rum for at least 2 to 4 years.

WHY?
The flamed bourbon cask initially adds a sweeter vanilla and caramel flavour, followed by the charred dark Rum cask which adds a sweet spicy rum character to the final expression.

WORTH IT
Premium dark Caribbean Rum casks are hard to find and are far more expensive to import all the way from the Caribbean to Ireland, but in our view they are worth it for the rich fuller character they add to our final HYDE Single Malt whiskey.  (Caribbean Rum casks cost €900 each whereas American Bourbon Casks cost just €80 each!)

HYDE NO.2  PRESIDENT’S CASK

HYDE 6-Year-old Single Grain Irish Whiskey is Triple-Distilled on a continuous three column Copper still, before being aged in flame charred, grade-A, American white oak Bourbon casks. These are imported all the way from Kentucky in the USA.

Our Bourbon casks are charred for up to a minute by the cooper before being filled with the triple distilled Single Grain Irish Whiskey ‘new fill’ spirit. We flame char our Single Grain casks to what is described as a ‘heavy alligator char level 5’ to create an open cracked carbon layer on the inside of the cask. This high temperature flame charring process caramelises the oak wood sugars on the inside of the cask leaving vanillins, lactones, and tannins to influence the whiskey’s final flavour over the 6 long years of maturation.
